Tomato and Bacon Salad Recipe

If you have a chance to buy or better yet grow heirloom tomatoes, this is the perfect way to enjoy them. This recipe like so many allows for variance based on what you have on hand in the pantry and of course your personal taste. I made this today with beautiful fresh tomatoes, crumbled feta cheese and fresh coriander.  It was wonderful. This recipe and beautiful photo was inspired by In Sock Monkey Slippers. Here are the details...


3 tomatoes(they are shown in thin slices, but I diced mine for easier serving)
1/2 cup fresh corn kernels (corn sliced off of one ear that was a leftover!)
4 slices cooked bacon
diced red onion about 1/4 cup (green onion or Vidalia would work here as well)
1/4 cup blue cheese crumbles (feta worked or old cheddar, Asiago ...your choice)
fresh ground black pepper (Don't add salt until this salad is served as salt on tomatoes makes them weep, so your salad becomes very watery.-the cheese seems to add enough saltiness for me)
A good handful of fresh chopped coriander or fresh basil ( you could add some chopped mint leaves or flat leaf parsley, they all taste a little different but they will work wonderfully)
For the dressing:
 shake in a jar or whisk in a bowl...1/4 cup red wine vinegar and 1/4 cup light tasting olive oil
You won't need it all just pour it on lightly. Save any remainder for the next great salad you make! Enjoy!
