Cucumber Salad Recipe

Fast and easy cucumber salad. A great alternative to coleslaw. Save your empty large Strubs pickle jar and fill it with this great mixture. A cool summer vegetable to enjoy for lunch or dinner. 2 sliced English cucumbers
1 medium sliced red onion
1 small sliced green pepper
Stir the prepared veggies in a large bowl to combine evenly. Pack firmly in a large jar.

 In a saucepan combine:
2 cups white vinegar
1 tbl salt
1 1/2 cups sugar
1 tsp celery seed
1 tsp dried chili pepper flakes
Stir to combine. Bring to a boil. Remove from the heat and toss in  2 handfuls of ice cubes. Stir until the ice has melted. Pour carefully over the cucumber mixture in the jar. A jar funnel helps. This colorful salad will keep up to 2 months in the refrigerator.
 This was our '"go to" salad for lunch served with cold cuts throughout our hot, humid summer days.You can pack it in 2 smaller jars if that's what you have. Just try to use a jar with a large mouth for easy serving. Enjoy!
