Strawberry Parfait Dessert Recipe

I love the way this simple and delicious little parfait is presented. A natural snack at its absolute best. The most perfect presentation in a preserving jar. Fasten the lid and take it with you for an enviable coffee break or lunch treat or delight your guests on the patio with a with this homespun looking taste experience. Roasting the strawberries maintains their firmness, enhances their flavor, and creates the syrup. Photo courtesy  Dust Jacket Attic. Recipe inspired by  Spoonful.

  • Ingredients:
  • This makes 4, 8 ounce servings
  • 2 cups fresh strawberries,quartered
  • 1 tbl brown sugar
  • 2 cups Greek style yogurt
  • 2 tbl honey
  • 1/2 cup granola
  • mint for garnish optional

  • Preheat  the oven to 425 degrees. Combine the strawberries with the brown sugar. Pour them on a parchment lined baking sheet. Roast in the oven for 12 to 15 minutes, just until the juice starts to come out of the strawberries, but they are still firm. Pour the berries and the juice into a bowl and set to one side. Stir the honey into the yogurt. In 8 ounce glasses or parfait cups, place a layer of yogurt in the bottom. Next, add a few strawberries, then granola. Repeat the layers until the serving glasses are full. Top each serving with a spoonful of strawberries and a sprinkle of granola. Add a sprig of mint for garnish if you like. A simple and tasty dessert! Enjoy!
