Banana Coffee Smoothie Recipe

This recipe makes a great tasting smoothie for 2 people. A banana, leftover coffee, yogurt, honey and some nuts. Simple and delicious. This recipe was inspired by the folks at  Self Magazine. Along with fashion and beauty, this magazine seems to have some great tasting healthy food ideas.


1 cup coffee, cooled
1/2 cup plain yogurt
1 cup diced pear, peach or orange 
1 1/2 cups sliced banana 
1/4 tsp vanilla extract  (rum extract works here too)
1 tbl honey
a few walnuts, or unsalted peanuts,almonds or filberts (1/2 tbl)
Puree all ingredients in a blender. Pour into 2 glasses. Best served cold.

One cup of pear should be one large pear or peach or orange, or combination of what you have on hand.
1 1/2 cups of banana is 2 medium to large bananas. You'll only need to measure the first time. Enjoy!

I think i will try this, i make iced coffee all the time and will use a banana the next time , i use vanilla in everything and will try the honey as well, sounds great Lori
