This is one of my favorite spice blends. I most commonly use this blend in our favorite lamb curry, but feel free to use it also as a rub for your chosen meat. The ingredients for this particular blend were inspired by a recipe from Jamie Oliver in his book "The Naked Chef Takes off". This book was a gift to me from my husband and son in 2005 and it is brimming with recipe ideas that I am happy to share with you.
Hot and Fragrant Spice Blend
Ingredients
2 Tbl Fennel Seeds
2 Tbl Cumin Seeds
2 Tbl Coriander Seeds
1/2 Tbl Fenugreek Seeds
1/2 Tbl Black Peppercorns
1 Clove
1/2 Of A Cinnamon Stick
2 Cardamom Pods
Salt And Fresh Ground Black Pepper
Toast the ingredients in a small saucepan over a low heat. I usually stir them with my fingers lightly so that I can tell when they are starting to warm. Transfer the ingredients to a spice grinder. This blend has lots of heat and is very fragrant.
