Cucumber Salad Recipe

Fast and easy cucumber salad. A great alternative to coleslaw. Save your empty large Strubs pickle jar and fill it with this great mixture. A cool summer vegetable to enjoy for lunch or dinner. A different homemade salad that's easy to take on your next picnic or serve it to impress the folks at this summer's family reunion! Photo and recipe adaptation from Carl Barbaro.

Ingredients:

2 sliced English cucumbers
1 medium sliced red onion
1 small sliced green pepper
Stir the prepared veggies in a large bowl to combine evenly. Pack firmly in a large jar.

 In a saucepan combine:
2 cups white vinegar
1 tbl salt
1 1/2 cups sugar
1 tsp celery seed
1 tsp dried chili pepper flakes
Stir to combine. Bring to a boil. Remove from the heat and toss in  2 handfuls of ice cubes. Stir until the ice has melted. Pour carefully over the cucumber mixture in the jar. A jar funnel helps. This colorful salad will keep up to 2 months in the refrigerator.
 This was our '"go to" salad for lunch served with cold cuts throughout our hot, humid summer days.You can pack it in 2 smaller jars if that's what you have. Just try to use a jar with a large mouth for easy serving. Enjoy!
