Greek Salad Recipe





Traditional Greek Salad does not call for lettuce, however we enjoy some crisp romaine as an addition. You may leave it out if you wish to be authentic. The best part of this salad is the dressing which is so easy to make and we use it for any tossed salad in our home. So make extra dressing!!! This recipe is adapted from Mediterasian Cooking.

Salad Ingredients:

Romaine lettuce for 3-4 people
2 Tomatoes cut into wedges
1/2 Red onion sliced into rings
1/2 Cucumber sliced into half moons
1/2 Green pepper (optional) cut into wedges
4 oz. Feta cheese cut into small cubes
16 Kalamata olives

Mix all ingredients together in a large bowl, pour your desired amount of dressing onto the salad and toss. Serve immediately. 

Dressing ingredients:

6 tbs Olive oil (we prefer light tasting)
3 tbs fresh squeezed lemon juice ( not from a bottle)
2 cloves of garlic minced
1 tsp dried oregano
1/2 tsp of salt
1/2 tsp freshly ground pepper

Whisk together all dressing ingredients and pour desired amount over salad. This dressing keeps well in a mason jar refrigerated for up to 1 week. Enjoy!
